The cookies are appropriate to eat for breakfast or snack. My family also eats them with a peanut butter or jam filling in between. Although cookies are sugar free, the sweet taste gives them fruits. People who like sweets, will love them. Recipe and photo by Kristýna Maršalíková.
Ingredients (12 coockies):
- 2 apples
- 2 ripped bananas
- a mug of oat flakes
- a spoon of almond flour (it is not necessary)
- a mug of dried figs
- 2 teaspoon of gingerbread spice
- a pinch of salt
Take your oven to heat up to 200°C.
Crush the bananas in a blender or by fork, , add roughly grated apples, chopped figs and other dry ingredients. Mix well in compact matter – it should not be sparse, but keep it together. Add some oatmeal if necessary.
Put baking paper on the baking sheet. Create twelve coockies with spoon.
Bake for 30 minutes until golden brown.
Allow the cookies to cool slightly after baking. Then remove them from baking paper.

Cookie composition is appropriate for people with lactose intolerance and people with allergy to cow’s milk protein. By replacing oatmeal with gluten free alternative (e.g. buckwheat flakes) cookies are appropriate for people with celiac disease.
These cookies are good source of energy for athletes for energetically expensive exercise. Otherwise I recomemnd to eat cookies together with sorce of protein, such as dairy products – youghurt, curd cheese or fermented milk .
